From FFXII, mainly the menu sounds. Anyone know where I can track them down?

if you have a TV with a headphone jack, and a Line In plug on your sound card, why not just use Audacity and copy the sounds from there?

or use A/V out and a RCA to 3.5 millimeter adapter.

I was thinking more along the lines of downloading them. There aren't really any areas where there's no background noise/music.
