Hi,
this is weird... I'm using Ubuntu Hardy with a fresh install of OSS4 (finally got rid of PulseAudio). Everything is fine, so far (Okay, Rhythmbox does some weird crap, probably due to the deprecated version of GStreamer), but ZSNES stays quiet.
First off, yes, ZSNES is using OSS. Terminal shows it opening two audio channels and zsnes even shows up in ossxmix. However, it doesn't pass any audio to OSS, the volume level for zsnes stays at zero.
Any clue? I'm using ZSNES 1.51 with OSS4 build 1016.

If you compiled with libao, you need to try the options via the command line and/or cfg.
If you didn't compile with libao, you need to configure SDL's audio output (you would need to see their website on how you do this).
