They didn't bother to examine the San Francisco system font to identify why it happens with that particular font's ligatures, and not with any other font, or in other apps that either use different fonts, or use their own FreeType based text rendering.

Seriously, it is good that I can get away with bullshit like that here, because I was this close to posting some unicode in Youtube comments beneath iPhone reviews.
